Quick, Easy, Tasty Tomato And Rosemary Cod!

Normally when I cook fish it's steamed in a big old bambo steamer with lots of ginger, spring onions and soy sauce! I love fish cooking in this way, the meat always becomes so soft and lightly infused - YUM! Anyhoo I thought I'd have a go at cooking fish in a different style...in a sauce! I chose cod because it's a lean fish and cooks very quickly and when poached or steamed the meat becomes very succulent. Cod is also rather inexpensive and versatile - I like to compare it to poultry. Now I'd class this as an Italian inspired dish due to the tomato and the rosemary - I'm sure I've just made a huge stereotype and apologies in advance. Maybe we should just call this "mediterranean inspired"? Anyway the cod is cooked in a light and easy to make sauce and such a dish would be perfect for a romantic meal for the upcoming Valentine's Day!




Quick, Easy, Tasty Moussaka!

Moussaka is an aubergine-based dish usually associated with Greek cuisine. The traditional Greek method consists of up to three layers of aubergine (zucchini) slices with minced meat and a tomato sauce and topped off with a bechemel or cheese sauce. However the Balkan take on Moussaka consists of the meat base topped with the aubergine and the sauce. This is the style I have opted for due to its ease! I first came across Moussaka while on holiday in Cyprus many a moon a go. My mum bought a Cypriot-Greek recipe book while we were there and before long Moussaka had become a regular on our dining table! My mum used to salt and grill the aubergine slices and do lots of other fiddly steps as dictated by the recipe book but I found this too time consuming and decided to create a simplified version which still produced that yummy Middle Eastern flavour.
